A Simple Chicken Recipe - Baked Chicken with Green Tomatoes
Green tomatoes are always available in Western Pennsylvania from July until first frost (usually some time in October). Unless you are from the South, where fried green tomatoes are almost as common as okra and grits, you may not have thought about using tomatoes before they are ripe. Most people here only use ripe ones. This recipe was developed in November a couple of years ago to use up all the green tomatoes left in the garden. This recipe gives you a way to make a delicious dish with chicken tenders and the leftover tomatoes. If for some reason your tomato supply is so big you want to make this dish in the middle of the season, have at it. If you fry the green tomatoes, you would use salt to remove some of the moisture. In the baked dish, the moisture isn't that critical so you can skip that step. In fact, the moisture helps keep the dish moist and is an advantage here.
Ingredients
3 medium green tomatoes, sliced 1/2 inch thick
2 small bell peppers, chopped
1 medium yellow onion, chopped
3 tablespoons olive oil
salt and pepper to taste
2 chicken tenders (about 3 ounces), seasoned with salt and pepper
Instructions
1 - Place green tomatoes in the bottom of a greased baking dish.
2 - Sprinkle chopped onion and green peppers over the top.
3 - Drizzle 2 tablespoons of olive oil over the top.
4 - Bake for 15 minutes in an oven preheated to 400 degrees Fahrenheit.
5 - Remove from the oven and place the seasoned chicken tenders on top.
6 - Drizzle with remaining tablespoon of olive oil.
7 - Return to the oven and bake for another 10 minutes.
8 - Remove and serve immediately.
Serve this dish with a salad made with fresh ingredients from you garden and you have a complete meal.

Skinless boneless baked chicken breast recipes?
I would like a recipe using boneless, skinless chicken breasts that you BAKE. I do not want to use canned soups or any cream sauces, and no veggies added to it. I am new to cooking and would like a very simple yet flavorful recipe. Thank you for suggestions! =)
