Easy Curry Chicken Recipe
Curry chicken is a food that every one loves to eat but many are afraid to make. If you Google curry recipes you will find many that are long, detailed and time consuming but never fear there are
a few tips to making simple easy curry chicken. Don't worry about the taste I use this easy curry chicken recipe on a regular bases and my curry chicken is highly requested among friends and family; the recipe does not reduce flavor but it does turn curry chicken from a weekend only meal to an any day of the week meal.
Easy Curry Chicken
Serves 3-42 lbs of chicken parts (separate leg from thigh)1 medium/large onion chopped1 stalk of celery chopped1 can of condensed cream of celery or cream of mushroom soup2 cloves of garlic sliced or crushed1-2 cups of water1 Tbsp of curry seasoning1 tsp of pepper2 pinches of salt1 scotch bonnet/habanera pepper chopped (optional) remove seeds if you are not a fan of hot food1 Tbsp oil (optional - for browning)2 potatoes (optional) peeled and cut into quarters or large bite sized piecesLittle cooking oil or olive oilCover the chicken parts in the pepper and curry seasonings and set aside. If you want your easy curry chicken to have a stronger curry flavor allow to marinate covered in the refrigerator for a couple of hours.Heat your stew pot or large skillet with a little oil over medium-low heat, just enough oil to cover the bottom of the pot. Placed the chopped celery and onion into the heated pot stir once and sprinkle with salt; sweat the vegetables with minimum stirring until they onions become translucent in color.Remove the vegetables and place to the side, add a little more oil to the pot and on medium heat brown the seasoned chicken parts. This part is optional, browning takes a little more time but it does add to the flavor and coloring of the easy curry chicken.After browning the chicken turn the heat to low and add back to the pot the sweated vegetables, habanera pepper and garlic. Mix the condensed cream of celery soup with 1 cup of water and add to the pot. Stir to loosen any chicken or seasonings on the bottom of the pot. The chicken should be nearly covered by liquid, if not add some more water. Cover and simmer the easy curry chicken on low.If you are using potatoes add them the last 30-45 minutes of cooking time. The easy curry chicken will be done in about 45minutes to an hour but can cook for over 2 hours with no problems. You will be able to tell when the chicken is fully cooked because it will begin to pull or shrink away from the bone. You can wait until the chicken is done before adding the potatoes and then cook until the potatoes are easily pierced with a knife.
I typically like to make my easy curry chicken a little heavy on the sauce and potatoes, this way once the chicken is all gone I can make a meatless meal out of the potatoes and gravy. I have chicken breast, tomato's, cilantro, red onion, garlic, black beans, corn, jalapenos. I also have rice or pasta for a side. Can anyone think of anything good to make? If so please share:)
