4 Roasted Chicken Recipes For Thanksving

sandwiches, in salads and in soups. When imagination finally fails at anything new, the rest of the turkey is
thrown into thefreezer to become an unidentifiable lump because a thought about labeling it would be one
more thought on that turkey. life needs to move on.

If this is a problem with a family of, say, four or more people, imagine the plight of a couple or a single
person who doesn't want to live on turkey for the next 6 months because they have no room in the freezer for
anything else.

Chicken. That small turkey shaped bird. Just enough for a meal or two. Just as tasty and golden brown as it's
bigger brother. chicken goes just as well with all of the usual Thanksgiving-expected side dishes. No one will
need do the obligitory statement at the table of whether the turkey is dry or moist - the chicken is always moist.
And with chicken, there won't be the "sleepies" (because of all the tryptophan) just when the game comes on.

Here are some basic things to know about preparing roasted chicken. Choose a broiler-fryer. It will be
younger and more tender. Preferably, buy fresh the day before, if not, give enough time to thawing a frozen
bird in the refrigerator. Preparation should be done in a safe way, with a designated cutting board that later
items like vegetables will not touch. Cross-contamination can be a problem and cause sickness. Rinse the
chicken well, inside and out. Wash hands and counters, often, with soap and water. Throw the handtowel into
the washer once the chicken has been prepared and handling is done.

Maple Glazed Chicken With Apples

Maple- the tawny natural sweetness, gathered as sap from the tree in the crisp Fall, amidst the crackling of
leaves underfoot.

1- 2 1/2 to 3 pound broiler-fryer chicken
3 Tablespoons butter
1/4 teaspoon of dried rosemary
2 tablespoons real maple syrup
2 tablespoon chopped walnuts
4 small peeled and cored apples

Heat oven to 375 degrees. Rinse chicken and pat dry. Skewer neck skin to the back. fit the wings to the back
and scewer the legs to the tail. Lay breast side up in a shallow roasting pan. Place apples around the
chicken. Melt butter and add the rosemary. Brush over chicken and apples. Roast, uncovered in center of
oven for 1 1/4 to 1 1/2 hours or until the chicken is no longer pink and the drumsticks move easily when t
wisted. Brush occationally with drippings. Once done, drizzle maple syrup over chicken and apples. Sprinkle
with the chopped walnuts. Serve immediately. Makes Up to 4 servings.

Pocket Chicken With candied Ginger

Ginger- the spirited tingle of ginger spice is an unexpected delight with chicken

1- 2 1/2 to 3 pound broiler-fryer chicken
2 tablespoons butter
1/4 teaspoon dried tarragon
2 1/2 tablespoons of minced candied ginger (1/4 inch cubes)
1 teaspoon of candied ginger strips as garnish

Heat oven to 375 degrees. Rinse chicken and pat dry. Starting on the chicken's back, using a sharp
pointed paring knife cut small pockets into the skin, 1/4 inch wide and at least as deep. Slip a cube of
candied ginger into the "pocket".Continue this until 1 tablespoon of cubes have been used. Turn chicken
over and scewer the neck skin to the back and fit the wings behind. Skewer the legs to the tail. Place in a
shallow roasting pan. Continue making pockets over breast and legs and insert the cubed candied ginger.
Melt butter and add the tarragon and brush over the chicken.Roast, uncovered in center of oven for 1 1/4 to
