Healthiest Butter Chicken Recipe

If, like me, you love a tasty butter chicken but are wary of the calories I've got the perfect recipe for you. This simple recipe uses yogurt instead of cream making it actually healthy for you. It's the perfect one pot recipe that is so easy, quick and satisfying it may become a staple in your kitchen - I even get rave reviews from friends and family every time I cook it.

You will need a few items from your local Asian/Indian food store but these are readily available and cheap.

Ingredients:

.5 kg Boneless Chicken (Thigh Meat)

2 cups plain unsweetened yogurt

2 tsp curry powder

Salt to taste

2 tbsp tomato ketchup

2 tbsp butter

2 tbsp cream

1 tsp kasoori methi (dried Indian herb), or use chopped corriander leaves as a substitute.

Method:

Marinate the chicken in the yogurt and curry powder for at least .5 hr in the pot you want to cook in.

Cook on a very low flame covered till chicken is almost done. Add tomato ketchup, salt to taste, butter and cream. Cover and cook till done. Add the dried herb or chopped corriander leaves. Rest for 5 mins and serve with plain rice or naan bread.

Then hear the compliments rolling in!!
