Beer And Chicken Pairing: Curry
Beer and chicken pairing is a great approach for dishes that do not work well with wine. This is one recipe to make a traditional favorite, beer and curry, and to help firefighters.
5 medium or large sliced shallots
1 3/4 teaspoons Thai green curry paste
14-ounce can unsweetened coconut milk
2 teaspoons fish sauce
1 pound skinless boneless chicken cut into thin strips
1 large red bell pepper cut into thin strips
1/4 cup chopped fresh basil plus additional sprigs for garnish
2 tablespoons fresh lime juice plus wedges for garnish Heat the oil in a large saucepan over medium heat. Add shallots and curry paste; stir until shallots soften for about 2 minutes. Add coconut milk and fish sauce and boil. Add chicken and bell pepper, and stir until the chicken is just slightly cooked. Stir in basil and lime juice. Season with salt and pepper. Divide the curry into bowls. Garnish with basil and lime. Fish sauce adds special flavor. You can find it in Asian markets (the supermarket brands are usually too bland) under such names as nam pla or nuoc nam. It's usually in tall bottles and is made from salty, fermented fish. Most chicken curry recipes suggest white breast meat but don't hesitate to experiment with dark meat. The stronger flavor blends well in this complex and spicy dish. Beer and Chicken Pairing: Hook & Ladder Golden Ale Hook & Ladder Golden Ale promotes itself as being especially good with curry. The malt sweetness and fruit essence makes it taste great with curry. On a practical level, beer with curry also helps you feel more comfortable eating such spicy food because beer reduces the hot feeling. By contrast, drinking water actually increases the sensation of heat. Hook & Ladder Golden Ale has a deep color and medium body. Williamette hops give it a pleasant malt aroma. It's crisp with a little citrus fruitiness. Easy Thai Chicken Curry?
I have been looking all over the Internet for this, but have had no luck. For the love of God does someone have an simple Thai chicken curry recipe? There is a red chicken curry at a local restaurant I enjoy and it does not look that difficutl. It looks like it is bamboo shoots, cabbage, curry paste, cocounut milk, basil (maybe) and chicken.
