Best Chicken Enchilada Recipe
Green Chili Enchilada Casserole
Ingredients
2 lbs Ground Beef or Hamburger
1 12 oz sour cream
1 12 oz can cream of chicken soup
1/2 lb cheddar cheese grated
1 package corn tortillas
2 4 oz cans green chilies
1 white onion finely chopped
Salt, garlic powder, pepper to taste
Fry beef with salt, pepper, garlic, and onion. In large a bowl mix sour cream, green chilies and soup (don't add liquid). Add hamburger to mixture. Mix well. Cut corn tortillas into quarters. In casserole baking dish alternate layers of cut tortillas and beef mixture. Top with cheese and bake at 375 degrees about 15 minutes or until cheese is melted. Let stand 5 minutes and serve. Number of Servings: 8 Note: This is great served with tortilla chips and refried beans as sides or with a light salad. Little History: My two oldest sons and I were living in West Texas when I learned this recipe. My oldest, about 5 at the time was playing with the boy across the street as I watched them in our front yard. The mother came across the street with a plate covered in tin-foil saying she had made this casserole for their dinner but there was too much for them and wanted to share it. I thanked her and we went in our respective houses. I had already prepared our dinner which was waiting in the slow cooker so figured would save her offering for the next night. I did however take a peak and was not impressed with the 'appearance' but oh did it ever smell good. After dinner bathed the boys and put them to bed setting down to watch some television before I went to bed. I kept thinking of that casserole in the refrigerator though. Temptation got the best of me and I pulled it out taking a fork from the kitchen drawer I 'sampled a taste'. Yea right, before going to bed I had 'sampled' half of what she had given me... The next day I marched across the street returning her empty plate and demanded the recipe. She explained to me when they first moved to Texas from Mexico they didn't have much money and found this inexpensive recipe in a magazine but didn't feel guilty about cooking it because when her mother-in-law visited from Mexico she always asked her to make that Green Chili Enchilada Casserole.
