Super Easy Chicken Soup Recipe
What's the easiest thing to cook on a cold winter's day? chicken soup. I have the simplest recipe that is not only so yummy, it's easy to change if you're lacking one or two of the ingredients that
1.5 pounds of chicken, boil in water in a 3 qt sauce pan with salt (any type of chicken will do, although boneless, skinless chicken thighs are awesome). If you have leftover chicken you can completely eliminate this step.
While the chicken is boiling, saut onion, celery, carrots (or really any vegetable you'd like) in salt, pepper and olive oil.
Once the chicken is done boiling, usually in about 15 minutes, take it out of the water (make sure you save the water) and shred the chicken with 2 forks.
Return the chicken and vegetables to the water/broth and season to taste. Sometimes I add to the water/broth, chicken broth, sometimes I use vegetable broth, sometimes chicken bouillon cubes, whatever I have around the house.
At this point, I usually add uncooked rice, wild rice usually tastes best. I let the soup simmer for 25 minutes or so until the rice is cooked. If you have leftover rice, I wouldn't add it until you are ready to serve the soup.
This recipe is so great because it's so versatile. I've been making this soup for awhile now and every time I make it my family loves it, no matter what combination of vegetables, chicken, and rice that I use.
