Chicken And Rice Casserole Recipe

How To Make Chicken And Rice Casserole

chicken-rice-recipe: Chicken And Rice Casserole Recipe Casseroles are not only easy to make, but they are a balanced meal. With a busy lifestyle there is nothing easier than to just throw a few things together, pop them in the oven and let it just bake on its own. The most time spent on this dish will be in the preparation of this dish. Best of all, it's delicious!

Things You'll Need:

  • 1 cup white rice (washed)
  • 1 1/2 cup water
  • 1 carrot diced
  • 1 cup frozen corn or mixed vegetables
  • 1 cup shredded or grated cheese
  • 1 can cream of chicken soup
  • 1 medium sized potato chopped
  • 4 chicken legs or thighs or chicken breast
  • 2 tablespoons butter
  • 2 tsp seasoning salt
  • baking pan or casserole dish
Instructions:

Step 1: In a small bowl wash the rice and place at the bottom of baking pan or casserole dish.

Step 2: Empty cream of chicken soup into baking pan with rice and add 1 1/2 cup water to content, 2 tablespoons margarine and 1 cup frozen corn and stir.

Step 3: Scrape skin off carrot and dice or cut into small pieces. Then add to rice.

Step 4: Peel potatoes with scraper, dice or chop into small 1 inch cubes or bigger (depending on taste) and then add to rice mixture and stir until everything is evenly distributed.

Step 5: Preheat oven to 350 degrees for approximately 5 minutes.

Step 6: Wash chicken (in lemon juice optional, however it's a great way to clean meat products) and season thoroughly with seasoning salt. Then place on top of rice mixture, cover and place in oven for about 30 minutes and let cook.

Step 7: Remove from oven after 30 minutes and sprinkle 1 cup cheese on top of chicken casserole and return to oven for another 20 minutes or until cooked.

Step 8: Then remove from oven and let casserole cool for 5 to 10 minutes and then serve.

Tips & Warnings

  • 1. Instead of carrots and corn; frozen mixed veggies are a good option.
  • 2. Cheese can be added after casserole has been completely baked.
  • 3. Always season to taste.

Could someone please help me with a Chicken and Rice Casserole recipe?
I've lost my favorite Chicken and Rice Casserole recipe and was wondering if anyone else had the (or a similar) recipe? I remember it had the chicken and rice (of course), cream of chicken soup, cream of celery soup, celery, onion, a little lemon juice and buttered bread crumbs as a topping. (I think it had a little mayonnaise, too.) Any help locating this recipe or helping to construct a similar recipe would be greatly appreciated. (P.S. I'd like to figure out how to make it in a crock pot.)
