Healthy Thai Salad Recipe: Thai Chicken Salad

Over the last few months, Thai food has become really popular because of its richness in seasonings and spices. I'd like to share with you one of my favorite healthy Thai salad recipes: Thai chicken Salad. Thai chicken salad is a hearty salad of chicken, laced with a chili and lime dressing.

Ingredients

8 oz chicken breasts

1 red onion, finely sliced

.5 cucumber, finely sliced into matchsticks

1 stalk lemon grass, finely chopped

2 tbsp chopped spring onions

juice of 2 limes

1-2 tbsp fish sauce

2-4 red chilies, finely sliced, to garnish

fresh coriander, Chinese mustard cress and mint leaves, to garnish

The hardest part to making a Thai salad recipe is figuring out the ingredients. If you're foreign with southeast Asian ingredients, you might end up putting the wrong things into this dish. As a result, you're going to wonder why it doesn't taste satisfying. Let me clarify some of these ingredients and where you can get them at. Lemon grass is probably something you've never heard before. If you don't know what it is, lemon grass doesn't look your lawn. It is a very long green stalk that's about 2 feet long. It's noticeable characteristic is that its leaves are very, very sharp. You can find lemon grass at your local Asian grocery store. Remember that soy sauce and fish sauce are not the same thing. Soy sauce is dark and black. Fish sauce is brown and carries a strong stinky smell. Don't worry, it won't make the dish stink.

Directions


1.) Grill the chicken breasts to medium-rare. Allow to rest for 10-15 minutes.

2.) When cool, thinly slice the chicken and put the slices in a large bowl.

3.) Add the sliced onion, cucumber matchsticks and lemon grass.

4.) Add the spring onions. Toss and season with lime juice and fish sauce. Serve at room temperature or chilled, garnished with the chilies, coriander, mustard cress and mint.

Asian Chicken Salad Recipe?
I had a few bites of an AMAZING Asian chicken dish last night, but wasn't able to get the recipe or even ask what it was called. It was large pieces of chicken in a thick sauce. The sauce was definitely peanut or peanut butter and there was either curry or ginger or something else in it that gave it a perfect lingering spicy-ish flavor. There were no vegetables in it aside from maybe some chives or some small green. Any ideas what this is? What it's called? A good recipe? Thanks! PS I ate it cold and it was DELICIOUS! Not sure if it was supposed to be warmed up or not.
