Healthy Late Summer Stir Fry Recipes

chicken-stir-fry-recipe: Healthy Chicken Stir Fry Recipes Stir fry is a pretty good meal to have as it typically gives you some veggies as well as a lean protein meat. Combine that with the complex carbohydrates from the rice and you have a pretty tasty and healthy meal. Many of my friends cook but none make this quite the way I do.

You will need the following ingredients to make the grilled chicken and vegetable stir fry.

  1. Chicken. For a family of three I usually use about a pound and a half.
  2. Broccoli, I use at least a cup
  3. One bell pepper sliced
  4. One onion sliced
  5. Teriyaki sauce. I use this because it has less sodium than soy sauce.
  6. Rice. You will need one and a half or two cups per part chicken you use.
The first thing you will do is grill you chicken breast on your barbeque. I personally use a gas grill for convenience, but you can use charcoal if you like. Cook until done good and nice for about 10 to 15 minutes on each side. After it is done you want to let it cool enough to handle it then cut it up into pieces. I usually cut it into one inch cubes. This can be done to preference. I marinade the chicken overnight in teriyaki sauce and baste it on each side during cooking.

While you chicken is on the grill you can cut you your vegetables and put your rice on the stove or however you cook it. You want to insure that the rice and vegetables are ready within a reasonable time after you chicken is finished. You then want to start cooking the Onion and bell pepper. When the onions start to caramelize you know they are done. You just want a little color on the onions not totally dark. Next you put your rice chicken and broccoli in and stir it around in your wok. I typically do this for about 10 minutes or so until the rice starts to brown just a tad bit. I typically do not use any oil and just use cooking spray. If you don't use a non stick wok you will probably need at least a couple tablespoons of oil. I do not use the teriyaki sauce during the stirring process as I find it makes it taste more salty. Many people and places do, but I have not found a way to make it turn out how I like it. I use it as a marinade and then before serving I usually splash teriyaki all over the wok after it has been off the heat for a bit and stir it around a bit.

When the stir fry is ready, which should take five to seven minutes you are ready to eat it. You can serve it with chopsticks if you like. I am the only one in my family that can eat with them and usually just put forks with it though. I sometimes will make this up and take it as meals during the week to work as it is not expensive to make, not messy and tastes good.
