These leftover chicken recipes will leave your family wanting much more.
Whether you have leftover chicken breasts, some wings, or half a chicken you will want some leftover chicken recipes to use the meat up. Thats why Im going to share a few of my favorite leftover chicken recipes here with you.
Easy Leftover Chicken Recipes
This first section I am going to share easy leftover chicken recipes. All of these recipes can be complete quickly and most with little to no prep.
Leftover Chicken Nachos
2.5 c chicken, diced
1 pkg fajita seasoning
.5 c water
1 bag of tortilla chips
1 c cheddar cheese, grated
1 c Monterrey jack cheese, grated
1 tomato, chopped
1 small can of olives, sliced and drained
c green onions, sliced
1 c salsa
Combine the leftover chicken, seasoning and water in a medium skillet. Over medium high heat, bring to a boil, stirring occasionally. Reduce heat to a simmer and cook for 5 minutes. In a shallow oven proof container, spread out the chips and pour the salsa over the top. Then spread the chicken and the cheese on top of the salsa. Place in the broiler until the cheese melts, then pull out and top with the tomato olives and cheese. Serves 3-4 for lunch and 6-8 as an appetizer.
Easy Leftover Chicken Salad Sandwich
1 c leftover chicken
1/3 c celery
Mayo
Sugar
In a mixing bowl combine the chicken and celery. Then add enough mayo to coat everything, and just a tad bit of sugar to sweeten it to your taste. Chill for a few hours before serving. This goes well on salad greens, in a tortilla, on a bun, or just on bread. This size of recipe is enough for 2, but can easily be doubled or tripled for your needs.
Leftover Chicken Alfredo- this recipe puts together 9 ingredients to make an easy white sauce with chicken that you put over fettuccine noodles. Most of the time I make the sauce ahead of time and when I'm ready for dinner I cook the noodles and just warm the sauce up. This leftover chicken recipes goes well with a salad or rolls.
Leftover Chicken Recipes for Casseroles
This next section is all about casserole leftover chicken recipes. Some of these casseroles can be made quickly and with little effort and some will require a lot of prep before it is ready. Take a look at the ingredients, prep and cook time and choose which one suits your tastes and needs best.Creamy Leftover Chicken Casserole
1.5 c chicken, cubed
1 can cream of mushroom soup
1/3 c milk
1 16oz bag of frozen vegetables, thawed
1.5 Swiss Cheese, shredded and divided
1 2oz jar of pimientos, diced and drained
Slat and pepper to taste
Combine the soup and milk in a large mixing bowl. Add the chicken, vegetables, 1 c cheese, pimientos and seasonings. Once well blended pour into a greased 9x9 baking pan. Cover with foil and bake for 40 minutes at 350. Pull out and top with leftover cheese. Do not cover and bake another 5-10 minutes or until cheese has melted. This goes very well served over rice, but you could also do it over noodles or potatoes.
Toasted Chicken Sandwich Casserole
4 c chicken, chopped
12 slices bread, lightly toasted
.5 c onion, chopped
.5 c celery, chopped
4 eggs, well beaten
2 c milk
1 c mayonnaise
Salt and pepper to taste
1 can cream of chicken soup
1 c Cheddar cheese, shredded
Lightly grease the bottom of a 9x13 cake pan. Place 6 slices of bread in the pan and sprinkle the leftover chicken, onion and celery over the bread. Then top with the remaining 6 pieces of bread.
Combine the eggs, milk, mayo, salt and pepper in a bowl. Spread this mix over the bread and then pour the soup on top. Cover with foil and refrigerate for at least 8 hours, but overnight is best.
Bake in 325 oven for 45 minutes, with the foil still covering the pan. Pull out of oven, discard foil and sprinkle cheese over it. Bake for another 30 minutes and remove from oven. Let cool for 10-15 minutes before serving.
Leftover Chicken with Noodles- this leftover chicken recipe combines soup, vegetables and chicken together and then adds some Chinese Noodles. Then you bake for 30 minutes and you have a very flavorful, Chinese inspired leftover chicken recipes for a casserole.
Chicken A'la Casserole- this casserole recipe is intended for chicken but can easily be done with turkey as well. It has celery and peas with the chicken and then you add chow mein noodles for a very tasty casserole.
Leftover Chicken Recipes
I am sharing my miscellaneous leftover chicken recipes here. Included in this section is a soup, pot pie and 2 tasty dishes that are baked.Leftover Chicken Tortilla Soup
2 c chicken, cubed
4 c chicken broth
1 c frozen corn
1 can of Mexican style tomatoes, chopped
1 15oz can of black beans, drained and rinsed
1 Tbsp ground cumin
1 Tbsp oregano
1 bag of tortilla chips
In a large pot add the broth, corn, tomatoes with the juices, beans, cumin and oregano. Bring this to a boil and then reduce to a simmer. Let cook for 15-20 minutes, it should reduce in size by about a third.
Stir in the leftover chicken, bring to a boil and then remove from heat.
This soup is very versatile at this point because you can serve it over tortilla or place the tortillas on top. Then you can top with cheese, avocados, sour cream, olives, or a few people will even top with a bit of shredded lettuce.
Personal Chicken Pot Pies
2 c chicken, shredded or diced
2 celery stalks, chopped
1 onion, chopped
3 garlic cloves, minced
2 c frozen vegetables, thawed
1 14oz can of NON condensed cream of mushroom soup
Four biscuits
Saut the celery, onion, and garlic in just a bit of butter or oil until translucent. Add the vegetables and soup and cook until boiling. Add the leftover chicken and bring back to boil, stir often because the cream will easily stick to bottom.
Serve the mix in a bowl or shallow mug. You can either serve it with the biscuit on top, bottom or like a sandwich.
Garden Chicken- this is one of my favorite leftover chicken recipes. It makes a very tasty tomato crust. Then adds cheese, the chicken and broccoli for a very filling and healthy meal.
Leftover Chicken and Potato Casserole- this recipe using both leftover chicken and leftover potatoes. It is very simple to make and goes very well with a salad or other vegetable.
