Chicken Breast Recipes: Chicken Casserole

Chicken. The other white meat. Much more popular (and much more affordable) than most other meats, chicken is a dish that is easy to prepare and easily pleases crowds of all sizes. The only trouble with chicken is...many times we run out of ideas on how to prepare it. Lucky for you, I have a great chicken breast recipe that is sure to be an instant hit. It is very easy to prepare, can be prepared ahead of time, can be frozen if need be and even tastes just as good (actually better in my opinion) the second time around! What is this delicious dish you ask? Why it's Chicken Casserole.

Officially you can call it Chicken Casserole, but in my house, we call it Chicken 4644. The reason for that is, if you follow the recipe, the casserole is meant to feed 6 people. But it is so good and so easy to eat, that if you have 4 hungry people waiting to eat, you probably won't have any leftovers. Thus...chicken for six for four.

So here's what you need to get started:

3 boneless, skinless chicken breasts; or about a pound (cooked) 2 cans cream of celery soup (you can also use cream of mushroom or cream of chicken, it's totally up to your personal preference) .5 cup milk 8 tbsp butter or margarine (use a butter stick if possible) 2 cups Pepperidge Farm stuffing mix (or any bread crumb/stuffing mix available) cup water

And here is how you make it:

In a pot, boil boneless/skinless chicken breasts until cooked then dry and cool Cut chicken into small chunks or pieces and spread over the bottom of a casserole dish. (I recommend a 9x13 pan) Whisk 2 cans of cream of celery soup and .5 cup of milk; pour over chicken In a pot, bring cup of water and a stick of butter to a boil, remove from heat and stir in stuffing mix. Once moist, spread mixture over the top of the casserole (do this slowly with a fork or spoon so that you can get an even spread Bake it now or save it for later!

When you are ready to bake the casserole, preheat oven to 375. Place casserole in oven uncovered and bake for about 45 mins or until you see the soup start to bubble. Serves 4-6.

This is a great chicken breast recipe that the whole family will enjoy! When I make Chicken 4644 I usually serve it with some crescent rolls and sno peas. Take some sno peas in a frying pan. Add a tablespoon or two of butter or margarine (depending on how many sno peas you are making) Place over fairly warm heat. Sprinkle on garlic salt and stir often. Cook until hot but crunchy (about 4 to 7 minutes depending) They are absolutely delicious! No matter what you serve with this chicken breast recipe, it's sure to make everyone happy!
