Easy Curry Chicken Recipe
Curry chicken is a food that every one loves to eat but many are afraid to make. If you Google curry recipes you will find many that are long, detailed and time consuming but never fear there are
a few tips to making simple easy curry chicken. Don't worry about the taste I use this easy curry chicken recipe on a regular bases and my curry chicken is highly requested among friends and family; the recipe does not reduce flavor but it does turn curry chicken from a weekend only meal to an any day of the week meal.
Easy Curry Chicken
Serves 3-4 2 lbs of chicken parts (separate leg from thigh) 1 medium/large onion chopped 1 stalk of celery chopped 1 can of condensed cream of celery or cream of mushroom soup 2 cloves of garlic sliced or crushed 1-2 cups of water 1 Tbsp of curry seasoning 1 tsp of pepper 2 pinches of salt 1 scotch bonnet/habanera pepper chopped (optional) remove seeds if you are not a fan of hot food 1 Tbsp oil (optional - for browning) 2 potatoes (optional) peeled and cut into quarters or large bite sized pieces Little cooking oil or olive oil Cover the chicken parts in the pepper and curry seasonings and set aside. If you want your easy curry chicken to have a stronger curry flavor allow to marinate covered in the refrigerator for a couple of hours. Heat your stew pot or large skillet with a little oil over medium-low heat, just enough oil to cover the bottom of the pot. Placed the chopped celery and onion into the heated pot stir once and sprinkle with salt; sweat the vegetables with minimum stirring until they onions become translucent in color. Remove the vegetables and place to the side, add a little more oil to the pot and on medium heat brown the seasoned chicken parts.
