Recipe: Slow Cooker Nacho Cheese Chicken

It's relatively safe, it's simple, it cooks while you're at work or school, it can be highly cost effective, and slow cooked food is often tender and tasty. chicken cooks especially well in a slow cooker because even the drier white cuts of meat tend to keep their moisture with this method of cooking.

My own crock pot history goes back a little over a year. Having never been one to spend time in the kitchen, this handy dandy little machine was a life saver and still is. chicken is a staple of our small household, so we began pairing chicken with different sauces and seasonings to see what we could come up with. One of our favorites is Nacho Cheese chicken. The best part of this meal is that you can eat it many different ways, but it's very easy to prepare.

Ingredients:

4 Boneless Skinless Chicken Breasts

2 cans Fiesta Nacho Cheese Soup (10.75 oz)

1 can Rotel (or comparable item) (6-8 oz)

Salt and Pepper (or seasonings to taste)

Tortilla Chips

Taco Seasoning Mix (optional)

Your favorite Nacho Toppings

Step 1: Decide how you want to eat your chicken. Some like to eat theirs as whole chicken breasts. My fianc and I prefer cubed, and still others like it shredded. Cut to your preference and place in the crockpot. If you like it shredded, you can always cook first and shred later.

Step 2: Season chicken with salt and pepper. You can use other seasonings as well, like southwestern spices or cayenne pepper depending on your tastes.

Step 3: Put the chicken in the crock pot.

Step 4: Pour the soup evenly over the chicken. You may find that one can is enough. If not, add the second one.

Step 5: If you want to add taco seasoning, do this now. I find that it's not needed, but sometimes it gives the dish an extra kick.

Step 6: Add Rotel (or equivalent). Mix together.

Step 7: Cover the crock pot and cook on low for 5-6 hours or high for 2-3 hours. Different cookers may cook at different temperatures, so if possible, check this periodically the first time you make it to make sure the cooking times are accurate.

Step 8: Serve over yellow or white tortilla chips and add your favorite toppings. I'm a fan of plain sour cream, and my fianc likes to add green chiles and black olives to his.

This recipe makes four servings depending on how large the chicken breasts are. You can always double or halve the recipe depending on your preferences. Whether you use the recipe as is or use it for a base for your own, it's tasty, easy, and versatile.

chicken recipes? slow cookers?
My moms having a spinal tap at the end of this week so dinner will be completely on me since she will not be allowed to get out of bed for a full 24 hrs. I was thinking the first day I would start some kind of chicken recipe in the crock pot before we head off for her spinal tap and the next day I'll just make whatever recipe I find. Even hamburger helper is fine. I have been searching for slow-cooker recipes and have found ones that don't sound too good such as "cranberry chicken" I would never be able to get her to eat that. She had stomache surgery so she cant handle rice and not a fan of mushrooms. Some recipes I have made before are "Teriyaki Chicken and Chicken and Rice, then there's pot roast and others but right now I have chicken. Does anybody have any slow cooker or other recipes for boneless skinless chicken breast? Please and thank you. Oh and does anybody know what types of Hamburger Helper there are that dont include Pasta? or anything else I could do with Hamburger meat besides meat loaf, tacos and burritos. So I found a good one, but its not for the slow cooker, Ill wrap chicken in bacon and pour cream of chicken and mushroom soup over the top and bake. I have made this before but I stuffed the breasts, then I will make baked potatoes as a side.
